Здравствуйте! А мы продолжаем разбираться в технологиях производства игристых вин, итак, начнем с метода предков.
Зачастую его еще называют: дедовский метод, сельский, ансестраль. Как мы писали ранее, это один из простейших способов производства игристых вин, предусматривающий лишь одну ферментацию, которая происходит в бутылке. Суть дедовского метода заключена в том, чтобы закрыть емкость, в которой находится напиток и держать его в таком состоянии для удерживания CO2 непосредственно до подачи на стол. Конечно, не обходится и без нюансов:
• первый заключен в том, что иногда давления, образовавшегося в бутылке недостаточно;
• второй – внешний вид, к примеру, в Лангедоке не принято фильтровать вино, соответственно частицы отработанных продуктов остаются в бутылке. Как следствие, вино получается мутным и с большим количеством осадка;
• и, наконец, третий нюанс – вкус, который получится в итоге. По причине того, что данный метод подразумевает использование естественных дрожжей, результат может быть весьма удивительным и отличаться… «сельской самобытностью» :).
Как бы там ни было, и у таких вин есть свои поклонники. Да и к тому же, никогда не помешает познакомиться с вином, изготовленным по сельскому методу, для понимания прилагаемых виноделами усилий.

Often it is also called: the grandfather's method, rural, ansestral. As we wrote earlier, this is one of the simplest ways to produce sparkling wines, involving only one fermentation that takes place in a bottle. The essence of the grandfather's method is to close the container in which the drink is located and keep it in such a state to hold CO2 immediately before serving. Of course, not without its nuances:
• the first is that sometimes the pressure generated in the bottle is not enough;
• the second - the appearance, for example, in Languedoc it is not customary to filter wine, respectively, particles of waste products remain in the bottle. As a result, the wine is cloudy and with a large amount of sediment;
• and, finally, the third nuance is the taste that will turn out in the end. Due to the fact that this method involves the use of natural yeast, the result can be very surprising and differ ... "rural identity" :).
Be that as it may, such wines have their fans. And besides, it never hurts to get acquainted with wine made by the rural method, to understand the efforts made by winemakers.
